Kristy’s Cute Baby + Creamy Breakfast Oats & Quinoa

I think my blog will be golden if I ever have a baby this cute:

My life has been pretty golden with a best friend like this:

Not to mention a husband who looks like this:

It’s Kevin & James!!! (Haha… as opposed to Kevin James.)

Yeah, I know he looks good with the baby. Some day. Of course, this photo spurred speculation among my co-workers regarding what the future Kreisel children will look like. Oh my.

Anyways. We got to see the Fullans! They were just driving through town on the way to Arizona and were able to stop and meet us for lunch. We ate at Larkburger and then headed over to the famous Yogurtini. That’s always the place my Midwest friends want to visit when they come to Denver! We don’t have fro-yo like that where we come from!!! The visit was short & sweet, but it was soooo good to see them.

After all my carbo loading (in preparation for no race, no nada!), I felt good about starting my Tuesday with this lovely breakfast.

Creamy Breakfast Oats & Quinoa (adapted from The Washington Post)

  • 1 1/2 cups unsweetened vanilla almond milk
  • 1 tablespoon honey
  • 1/4 teaspoon ground cinnamon
  • Pinch salt
  • 1/2 cup cooked quinoa
  • 3/4 cup old-fashioned oats

Combine the milk, honey, cinnamon and salt in a medium saucepan over medium heat. Once the mixture starts to bubble at the edges, add the quinoa and oats; stir to combine. Cover and cook for 7 to 10 minutes, until the mixture is creamy and the oats are tender. Makes 2 servings. Top with dried fruit, nuts, flaxseed, etc.

Quinoa for breakfast? Think about it! I kind of cooked it to death so really it wasn’t even noticeable that there was quinoa in the mix, but I loved it. It’d actually be really easy to do since you can cook up a big batch of quinoa and keep it in your fridge.

It was finally warm enough today that I could wear my pink t-shirt jacket. I have to tell you – the arms were a little bit tight after all those burpees I’ve been doing. Or I guess it could be all that pasta. Hard to say.

But okay. I can admit it. I ate pasta again tonight. I was hoping to wow you with lettuce and spinach, but I have to tell the truth. First let me tell you today’s workout: 2.25 miles of stairs + 4 miles on the treadmill. Not too shabby.

Creamy taco mac! No cheese was involved! Proud? And I actually used nonfat Greek yogurt to make it “creamy.” Greek yogurt is trickiest little ingredient! :)

Okay, one more baby face!

So sweet you can hardly stand it, right? Those baby blues!!! Okay, I better stop now before my nieces & nephews get jealous, but I love this baby!!

I probably shouldn’t ask who the cutest baby you know of is, so:

Favorite “dinner” food for breakfast? Well, the breakfast I made today. Or pizza. Obviously pizza would beat that in a heartbeat.

Oh. Here’s a safe one. Are you a baby person or a kid person? KID!! But James is super cute. And not like scary small.

Totally unrelated. Should we see The Vow? Of course, it has terrible reviews. But I tend to hate the movies with good reviews. Like Midnight in Paris. Haha. We have the DAY OFF TOMORROW so we might go to like a matinee. Cool, right?

P.S. I GOT MY DR TICKETS!! I’M GOING APRIL 11-17!! I’M SO EXCITED!!! Except that Kevin’s not coming. So sad. But it will probably really work better that way. I’m so excited to visit my church, my best roommate ever, my hood, my school, everything!!!
